Time Travel and Cheesecake

Good morning and welcome to my time travel episode. Stay with me now as we travel back…back…back in time to— August 15, 2018 – dum-dum-duuuuum! ***Pats my brow for all the non-existent sweat***

Okay, it is now Aug 15 and I am perusing Facebook- as we do- and I come across a yummy recipe for Kahlua Coffee Brownie Cheesecake- GASP! Oh my God! YES! So, I watch the one minute fifty-second video on how easy it is too make. Yup, one-minute and fifty-seconds to show me how easy it was to make. So I saved it to my page and prepared for the delicious journey.

I printed off the directions and ingredients and found that I already had most of them. Bonus! I made a quick list of what I needed and took a quick trip to the store for the items I lacked. May I point out that I hadn’t read the directions yet. This will become evident very quickly.

I skip into my little tiny itty bitty kitchen (did I mention it’s small?) and lay out all my yummy treasures. I scan the ingredients list to ensure I have everything I need. Mind you, I haven’t actually checked my cabinets for ALL the other items I believed I had. **Clears throat** And NOW I begin to read.

So the first part is the base which is a lovely chocolate brownie. Easy enough. I prep my springform pan and cut my parchment paper and make myself a brownie. The Hubs has taken up a spot in the kitchen to cheer me along and help where he can. Brownie is made and in the oven for 25 minutes, now on to step two- the coffee and Kahlua cheesecake! WooHoo!

Well, crap. This is where reading the recipe and FULL direction would have been prudent earlier. I have all the ingredients BUT there is a certain way you must cook this so now I am scrambling to figure out my problem. See, I didn’t realize I had to cook a 9 inch springform pan in a larger pan of water. You know, cuz it was a frickin’ cheesecake. **Face palm** Believe it or not the only pan I had large enough to put the cheesecake in a water bath was my turkey pan. Yup- that big monster of a pan was all I had BECAUSE I DIDN’T READ THE DIRECTIONS FIRST!

Okay, disaster everted. Maybe. I hope. Once the brownie comes out of the oven I wrap the outer edge of the pan in a layer of foil and pour the cheesecake mix on top of the brownie and then place it into the turkey pan for a water bath while it cooks. Back into the oven for 75 minutes. Wait? What? So far the brownie has cooked for 25 and now the cheesecake must cook for 75 minutes but the video was only 1 minute 50 seconds. Hmmm…

There are two steps left so I figure this would be a good time to READ the remainder of the directions. Um…wait…what? Once the cheesecake finishes its 75 minute cook time it must rest in the oven with the door shut for an additional 30 minutes AND THEN 30 minutes with the door open BEFORE removing it. What?

Oh! Wait! There’s more- soooooo much more. Once it comes out of the oven it must go into the refrigerator for 5-6 HOURS! So a video of 1 minute and 50 seconds has, at this point, turned into 8 hours and 40 minutes, at least. AND I still have 2 more steps.

The remaining 2 steps only take a matter of minutes- a ganache and whipped cream, but still. By the time I have slipped the cheesecake back into the refrigerator it has taken 9 hours to complete. That isn’t 9 in a row but a collective of 9 hours spent making it.

OH! Wait! I forgot an error. You know how I said that I hadn’t actually checked to cabinets to ensure I had EVERYTHING- yea- no, I didn’t. That lovely chocolate needed to make the ganache. Didn’t have it. Nope. The Hubs had to make a run to the store for it.

Now here is a good chuckle for you- THIS WAS MY PRACTICE CHEESECAKE! Yup, I made this as a practice for a friends birthday in 2 weeks. Thank God! I have time to get it right. Heather H. – you better appreciate all that I went through to impress you! Just kidding! You deserve it and I will enjoy eating this one just to make sure yours is fabulous.
